Plant-based. Vegetarian. Vegan. Those are probably the last three words you would expect to describe the cuisine of an Alabama food truck, but those are the offerings at Huntsville’s newest food truck.
Hippea Camper, a new, fully plant-based food truck will host its soft-opening at Salty Nut Brewery April, 22 from 5:00 p.m. to 7:00 p.m.
The brewery will serve cold pints as usual and Hippea Camper will share a sampling of its plant-based menu with the community, before its official opening in May.
Garrett Hardee, founder and owner of the Hippea Camper began collaborating with his mother, a certified raw vegan chef, over a year ago to develop a fully plant-based menu for his camper concept.
He converted a vintage Scotty camper to include a fully operational kitchen to concoct his healthy creations.
Hardee says the camper will begin traveling to various locations starting this May.
“You can find us at the Latham Farmers Market (Every Tuesday 3-6 PM starting May 7th), Meridianville (Every Tuesday 3:30-6:30 starting May 14th), Huntsville Hopsital (Every Thursdays 7:30 AM – 12 Currently), Greene Street (Every Thursday 4-8 PM starting May 2nd), Madison City (8 AM -12), and more to be added to the list as they become available. As far as other locations to find us if not at the farmer’s markets. We will be set up 4 days a week at Reseda Nursery on HWY 72 from 11-5 (Monday, Wednesday, Friday, Saturday), Tangled Strings (June 22nd), Rocket Republic (May 12th & 18th), and hopefully on Redstone Arsenal and Lowe Mill in the future (TBD). We also hope to be a part of the Food Truck Rallies downtown if we can still make it, we only got our truck two weeks ago,” said Hardee.
